The Associazione Pizzaiuoli Napoletani (APN) was founded in 1998 in Naples, Italy by Sergio Miccù.
Since its founding, APN has become the most globally recognized organization dedicated to the protection, certification, and education of authentic Neapolitan pizza-making traditions.
To preserve, promote, and protect the art of Neapolitan pizza-making around the world, ensuring that the ancient traditions of the pizzaiuolo are passed on with integrity and authenticity.
What APN Stands For

Preservation of Tradition
Safeguarding the centuries-old methods of pizza making as recognized by UNESCO, including dough fermentation, wood-fired baking, and specific ingredient standards (like San Marzano tomatoes, Fior di Latte, and Caputo flour).

Global Certification & Education
APN certifies pizzaioli (pizza makers) and pizzerias worldwide, validating their adherence to true Neapolitan techniques. Through its ambassadors and certified instructors, APN runs training programs, workshops, and exams across continents.

Enis Baçova is an internationally acclaimed pizzaiolo, entrepreneur, and cultural bridge-builder between Naples and the modern culinary world. Originally from Albania and now based in New Zealand, Enis is the founder of Dante’s by Enis Baçova—a pizzeria brand that has earned distinction for its uncompromising quality and deep respect for tradition, combined with creative flair.
A Caputo Cup silver medalist (2024), Enis is a proud ambassador for Latteria Sorrentina and Nolano San Marzano DOP. In 2025, he was appointed the official New Zealand Ambassador for the Associazione Pizzaiuoli Napoletani (APN), helping certify and grow the next generation of authentic pizzaioli in Oceania.
His vision goes beyond pizza—it’s about storytelling, education, and legacy. Through his projects like ALTO – A Little Taste of Eternity, Enis fuses gamification, Neapolitan culture, and digital learning to inspire a global audience. Whether it’s on the competition floor, at a pizzeria opening, or inside a masterclass, Enis brings precision, humility, and fire to every step of his journey.
